Watch in release order. Full stop. This is one of the rare fandom consensuses.
The series was written to be experienced in release order: mysteries are set up seasons before they pay off, character reveals assume you know exactly what release-order viewers knew, and Kizumonogatari (chronologically first) is a hundred times more powerful as a flashback after you've spent two seasons with these characters.
Starter path:
Chronological order is a fun rewatch. As a first watch it spoils half the series and frontloads its weakest pacing. Don't do it to yourself.
Dissenting-ish opinion for one specific case: if you've tried Bakemonogatari twice and bounced off, watching the Kizumonogatari films first can work as a hook — they're gorgeous, mostly standalone, and explain Araragi's deal. You lose some mystery but gain momentum. Release order is still the default recommendation though.
