My friend told me to just watch One Piece on Netflix and it jumped from some early episode straight to Egghead, skipping like 500+ episodes in between. is that actually intentional or is my account just glitched? Feels like I'm missing a ton of story if I start there.

Not a glitch, that's intentional on Netflix's part. They skip from around the Fish-Man Island era straight to Egghead, cutting somewhere north of 500 episodes. Oda himself has said Egghead is a reasonable jump-on point for new viewers since the arc naturally re-explains a lot of backstory as part of its own plot.
It's basically Netflix betting that most casual viewers won't commit to 1000+ episodes to catch up and would rather start near the current story, then go back later if they get hooked. You are missing a genuinely enormous amount of character development doing it this way though — Alabasta, Enies Lobby, Marineford, Wano are all skipped, so if you end up loving it, it's worth circling back for those instead of treating the Netflix cut as the whole story.
