Rewatching AoT from the beginning and the jump in art style going into the final season is honestly kind of jarring. i didn't realize until I looked it up that it wasn't even the same animation studio anymore. Was there some kind of falling out with Wit Studio or was it just a scheduling thing, curious what actually happened since the switch is so noticeable episode to episode.

honestly it wasn't a falling out, it was just capacity. Wit Studio flat out told the producers around season 3 that they didn't have room to keep AoT going at the scale the final stretch needed — they were already booked on other projects and the timelines wouldn't have worked without either delaying forever or dropping quality.
MAPPA was basically the only studio willing to take it on, and from what's been said in interviews since, Wit was actually relieved it landed there instead of getting rushed out the door somewhere worse. so no drama, no fight, just a scheduling problem that happened to line up with the point in the story where the tone gets way heavier anyway, which is probably why the shift feels so jarring to you. new director, new key animators, different house style all hitting at once instead of gradually.
ngl I think the show reads as two different productions because it basically is one, just handed off cleanly instead of messily.
